Ingredients
- 1/2 cup diced pancetta
- 1/2 cup pecorino cheese, grated
- 1/2 cup parmesan cheese, grated
- 3 large eggs
- 3 cups spaghetti
- 2 garlic cloves, peeled and left whole
- 3 1/2 tablespoons unsalted butter
- 1/2 cup single cream
- 1 teaspoon salt (for pasta water)
Instructions
- Put a large saucepan of water on to boil.
- Grate pecorino and parmesan, then mix together.
- Beat the eggs in a medium bowl and set aside.
- Add 1 teaspoon salt to boiling water and cook spaghetti for 10 minutes or until al dente.
- Melt butter in a pan. Crush garlic cloves and add to pan with pancetta. Fry on medium heat for about 5 minutes, stirring often.
- Remove garlic and discard once pancetta is cooked.
- Keep pan on low heat. Lift cooked pasta and add to the pancetta pan (a little pasta water is okay).
- Mix most of the cheese into the eggs, leaving a small handful for sprinkling later.
- Remove pan from heat. Quickly pour in the egg-cheese mixture and toss pasta to coat without scrambling the eggs.
- Add cream and continue tossing until spaghetti is thoroughly coated. Serve immediately with remaining cheese sprinkled on top.
